Sponge Cake

Sponge cake is one of the easiest cake to make. However, it could be a disaster if you don't really know the right technique in baking it..

Let me share with you a very easy sponge cake recipe, and I'm sure you'll be happy with the outcome later.

Mini Vanilla Rose Sponge Cake with Strawberry Jam and Vanilla Whipped Cream




(A)Sponge Cake :

2 eggs
75gm Caster sugar
1 tsp Vanilla essence
1 tsp Rose flavor
1 tbsp Rose water
75gm plain flour

(B)Filling :

250ml double whipped cream
1 tbsp icing sugar
1 tsp Vanilla essence
Strawberry Jam
Icing sugar (to be sprinkled on the cake)

METHOD :

(A)Sponge Cake

1) Beat the 2 eggs for a few seconds.

2) Add the Vanilla essence, Rose water and Rose essence.

3) Slowly pour the Caster sugar into the eggs. Beat the mixture until it thickens and turns into slightly white in colour.

4) By using a sieve (penapis) gently add the plain flour into the mixture.

5) Slowly and gently fold the plain flour into the mixture. To fold, take a spoon and gently stir the spoon over and under the mixture rather than just stiring as normal (gunakan kaedah kaup dari dalam ke luar). This is to keep the air bubbles inside the mixture.

6) Pour the sponge cake mixture gently into the mini cake tin. Make sure to rub the tin surface with vegetable shortening or some butter.

7) Baked the cake mixture in a 170 degree Celcius oven for 15-20 minutes by using the 'Top and Bottom heat'technique (Pre-heat the oven at 180 degree Celcius for 20 minutes)

8) Do not open the oven door until the time you need to check the cake. The cake is ready when the surface is bouncy when you lightly press it.

9) Leave the cake in the tin for awhile for it to cool. You can go around the edges with a knife to gently nudge it out, it should come out easily.

(B)Vanilla Whipped Cream Filling

1) Whisk the fresh double cream for a minute then add the icing sugar and vanilla essence into it.

2) Whisk until it is a thick whipped cream.

Lastly, spread the Strawberry Jam on one of the mini cake. Then, spread the whipped cream on the jam. Do not spread the cream until at the edge of the cake. Then take another mini cake and place it on top of the cream. Dust it off with icing sugar using the sieve.
